Laurence and Pascal moved to La Rochette in 1998, after seven years’ experience with their first business, “Le couvent” in Kaysersberg. She used to be a bank employee and he is a cook. They have brought together their personal and business lives and passed on their passion for hospitality to their two sons, Benjamin and Maxime.
Maxime serves in the dining room and is a wine steward. He gained his early experience particularly at Les Armes de France in Ammerschwihr and Les Trois Rois in Basel, before joining the family business in 2005.
Benjamin, who holds a catering degree and has been a trainee at the Auberge de l’Ill with the Haeberlin family, works with his father in the kitchen. His wife, Émeline, who is originally an accountant, takes care of the publicity and marketing side. Like Laurence, she combines versatility and ubiquity, and can be found at the reception, serving in the dining room or serving breakfast.
